见听雨JJ一直忙于红楼梦网刊制作发行,可惜帮不了什么忙,倒不如做点搬砖的体力活,帮忙吆喝一下。
读红楼梦其实从未超过前10页,拿起来只看做茄鲞一节。搜罗些关于茄鲞英文译本与大家分享一下

一、Hawks 霍克斯译本: ... and Grannie Liu, holding it in both her hands, began to drink. ‘Drink it slowly, now,’ Grandmother Jia and Aunt Xue counselled her. ‘Don’t make yourself choke.’
Aunt Xue told Xi-feng to offer the old woman something to eat with her bowlful.
‘What would you like, Grannie ?’ said Xi-feng. Just name it and I’ll feed you some.’
‘I don’t know the names of any of these dishes,’ said Grannie Liu. ‘Anything you like. They all taste good to me.’
‘Give her some of the dried aubergine,’ said Grandmother Jia. Xi-feng collected some between her chopsticks and held it up to Grannie Liu’s mouth.
‘There. I expect at home you eat aubergines every day. Try some of ours and see what you think of it.’
‘You’re having me on,’ said Grannie Liu, when she had eaten the proffered mouthful.
‘No aubergine ever had a flavour like that. If it did, we’d give up growing other crops and grow nothing but aubergines !’
‘It really is aubergine,’ the others laughingly assured her. ‘This time we’re not having you on.’
‘Really ?’ said Grannie Liu in some surprise. ‘Well, I couldn’t have had my mind on it properly while I was eating it. Give me a bit more, Mrs Lian, and this time I’ll chew it more carefully.’
Xi-feng took up some more from the dish in her chopsticks and popped it into Grannie Liu’s mouth. After prolonged, reflective mastication Grannie Liu agreed that there was indeed a slight hint of aubergine in the flavour.
‘But I still say this isn’t really like aubergine,’ she said. ‘Tell me the recipe, so that I can make it for myself.’
‘It’s simple,’ said Xi-feng. ‘You pick the aubergines in the fourth or fifth month when they’re just ripe, skin them, remove the pulp and pips and cut into thread-fine strips which you dry in the sun. Then you take the stock from one whole fat boiling-fowl, put the dried aubergine-strips into a steamer and steam them over the chicken stock until it’s nearly all boiled away. Then you take them out and dry them in the sun again. You do that, steaming and drying, steaming and drying by turns, altogether nine times. And it has to be dried until it’s quite brittle. Then you store in a tightly-sealed jar, and when you want to eat some, you take out about a saucerful and mix it with fried slivers of chicken leg-meat before serving.’
Xi-feng’s ‘simple recipe’ caused Grannie Liu to stick her tongue out and shake her head in wonderment.
‘Lord Buddha!’ she exclaimed. ‘That’s ten chicken gone into the making of it. No wonder it tastes so good!’
And having laughed a while over the recipe, she applied herself once more to the wine and slowly drank it down. She continued to toy with the cup after she had finished drinking, as though loth to put it down.

All Yuanyang could do was to have one large cup filled, and Granny Liu raised this in both hands to her lips.
"Go easy," warned both the Lady Dowager and Aunt Xue. "Mind you don’t chock."
Aunt Xue urged Xifeng to give her some food with the wine.
"What would you like, granny?" Xifeng asked. "Just name it and I’ll feed you some.
"How can I tell what these dishes are?" said Granny Liu. "They all look good to me.
"Give her some fried egg-plant," proposed the Lady Dowager with a smile.
Xifeng did so, picking up the food with her chopsticks and putting it into Granny Liu’s mouth.
"You must eat egg-plant every day," she remarked. "Taste this of ours and see how you like it."
"Don’t try to fool me," cackled Granny Liu. "If egg-plant tasted like this, we’d stop growing other crops just stick to egg-plant."
"It really is egg-plant," they assured her. "We’re not fooling you."
"Really egg-plant, is it?" marvelled the old woman. "All this time I’d no idea. Give me some more, madam, to chew more carefully."
Xifeng accordingly fed her another mouthful.
After savouring it slowly Granny Liu said, "It does taste a little like egg-plant, but still it’s quite different. Tell me how you prepared this, so that I can cook some for myself."
"It’s quite simple," replied Xifeng, twinkling. "Pick some early egg-plant and peel it, keeping only the best part, which must be cut into small pieces and fried with chicken fat. Then get some chicken breast, fresh mushrooms, bamboo shoots, dried mushrooms, spiced dried beancurd and various kinds of preserved fruit. Dice these too and boil them with the egg-plant in chicken soup, then add sesame oil and pickles and store it in a tightly-sealed porcelain jar. That’s all."
Granny Liu shook her head and stuck out her tongue in amazement.
"Gracious Buddha! No wonder it tastes so good, cooked with a dozen chickens."
While talking she had slowly finished the wine and now she started examining the cup.

Eggplant Terrine
Grandauntie, Liu was drinking [the big cup of wine], holding it between her two hands and gulping it.
"Slowly, slowly", said both Grandma Chia and Auntie Shueh. "Or you will choke."
Auntie Shueh then asked Phoenix to bring up some more dishes, and Phoenix said, 'Grandauntie, name it and I will produce it, whatever it is. I will feed you with my chopsticks.
"I don't know any names. Whatever you offer must be good,"replied Grandauntie.
"Let her have some eggplant terrine." said Grandma Chia, smilingly.
Phoenix then got hold of bits of the eggplant terrine and put them in Grandauntie’s mouth. She said laughingly. "You eat eggplant every day. Taste some of ours and see if you like it."
"No joking. This is not eggplant. It never tastes like this, " said Grandauntie. "Why, if eggplant tastes like this. I will plant only eggplant in my farm and not anything else."
"But it is true. We are not joking with you," said everybody. "Is it? " exclaimed Grandauntie in wonder. "There must be something wrong with my taste. Please young auntie, give me another bite and let me taste it slowly. "
Phoenix gave her another bite from the terrine. Grandauntie chewed it very slowly and then said with a smile, "There is a suggestion of the eggplant flavor. But still it does not taste like eggplant. Tell me how you make it. I can prepare it at home. "
That's easy, replied Phoenix. "Just take some fresh eggplant, and take off its skin. Cut the pulp fine and fry it in deep chicken fat. Then take some dried shredded chicken and mix it with champignon, fresh bamboo shoot, mushroom, banksia rose petals, hardened bean curd, and different preserved fruits. Cut all this up into mince and boil it in chicken soup until the soup is almost dry. Sprinkle a little sesame oil, and moisten it with wine dreg oil. Keep it in a porcelain jar and seal it tight. When you want to eat it, just take it out and dress it with fried boned - chicken claw. That is all. "
"Oh, my Buddha! " said Grandauntie, putting out her tongue. "That will take ten chickens to prepare it. No wonder it tastes so good. " Then smiling, she slowly finished her wine.
四、Translated by H. Bencraft Joly 【古登堡txt】 At this remark, the whole company once more gave way to laughter. Yüan Yang had no alternative but to give in and she had to bid a servant fill a large cup full of wine. Old goody Liu laid hold of it with both hands and raised it to her mouth.
“Gently a bit!” old lady Chia and Mrs. Hsüeh shouted. “Mind you don’t choke!”
Mrs. Hsüeh then told lady Feng to put some viands before her. “Goody Liu!” smiled lady Feng, “tell me the name of anything you fancy, and I’ll bring it and feed you.”
“What names can I know?” old goody Liu rejoined. “Everything is good!”
“Bring some egg-plant and salt-fish for her!” dowager lady Chia suggested with a smile.
Lady Feng, upon hearing this suggestion, complied with it by catching some egg-plant and salt-fish with two chopsticks and putting them into old goody Liu’s mouth. “You people,” she smiled, “daily feed on egg-plants; so taste these of ours and see whether they’ve been nicely prepared or not.”
“Don’t be making a fool of me!” old goody Liu answered smilingly. “If egg-plants can have such flavour, we ourselves needn’t sow any cereals, but confine ourselves to growing nothing but egg-plants!”
“They’re really egg-plants!” one and all protested. “She’s not pulling your leg!”
Old goody Liu was amazed. “If these be actually egg-plants,” she said, “I’ve uselessly eaten them so long! But, my lady, do give me a few more; I’d like to taste the next mouthful carefully!”
Lady Feng brought her, in very deed, another lot, and put it in her mouth. Old goody Liu munched for long with particular care. “There is, it’s true, something about them of the flavour of egg-plant,” she laughingly remarked, “yet they don’t quite taste like egg-plants. But tell me how they’re cooked, so that I may prepare them in the same way for myself.”
“There’s nothing hard about it!” lady Feng answered smiling. “You take the newly cut egg-plants and pare the skin off. All you want then is some fresh meat. You hash it into fine mince, and fry it in chicken fat. Then you take some dry chicken meat, and mix it with mushrooms, new bamboo shoots, sweet mushrooms, dry beancurd paste, flavoured with five spices, and every kind of dry fruits, and you chop the whole lot into fine pieces. You then bake all these things in chicken broth, until it’s absorbed, when you fry them, to finish, in sweet oil, and adding some oil, made of the grains of wine, you place them in a porcelain jar, and close it hermetically. At any time that you want any to eat, all you have to do is to take out some, and mix it with some roasted chicken, and there it is all ready.”
Old goody Liu a shook her head and put out her tongue. “My Buddha’s ancestor!” she shouted. “One wants about ten chickens to prepare this dish! It isn’t strange then that it has this flavour!”
Saying this, she quietly finished her wine. But still she kept on minutely scrutinizing the cup.

The Dowager and Aunt Hsueh both said: 'Slowly, don’t choke yourself.' Aunt Hsueh also commanded Feng-chieh to set out some food. Feng-chieh smiled and said:"What will you have to eat, old dear? Speak out its name and I will pick some out and feed it to you.'
Old Mrs Liu said:'What name do I know? Every kind is good.'
The Dowager smiled and said:'Pick out some egg-plant and dried salt fish and feed to her.' When Feng-chieh heard her say this, she accordingly picked out some egg-plant and dried salt fish and gave it into old Mrs Liu's mouth. She smiled and said:'You eat egg-plant everyday. Just try this egg-plant of ours whether it is tasty or not.'
Old Mrs Liu smiled and said:'Don't deceive me. If a flavour like this could run out of egg-plant there would not no need for us to sow grain. We would grow only egg-plant.' The all laughed and said:'It really is egg-plant. We aren't deceiving you any more. Old Mrs Liu was amazed and said:'It really is egg-plant! I have been eating for a long while to no purpose. Feed me some more, lady. This mouthful I will chew very fine.' Feng-chieh did pick some out again with chopsticks and put it into her mouth. Old Mrs Liu chewed it fine for a long while. She smiled and said:'Althouth it has a bit of scent of egg-plant, it still doesn't seem to be egg-plant. Tell me how it is cooked and I will go and cook some to eat.'
Feng-chieh smiled and said:'It isn't difficult. You take freshly fallen egg-plant and crack off the rind. You only want clean meat. Chop it up very fine. Use chicken fat to fry it. Again use strips of chicken mixed with hsiang-chun, fresh bamboo shoots, mo-ku, five-scented dried pieces of bean-curd, each kind of dried fruit, all chopped up very fine. Take chicken soup and heat it dry, take a suspicion of sesamum seed oil. Also add a toss of oil of grains. Store it in a porcelain jar and seal it up tightly. When you want to eat it, take it out. Use roasted chicken claws, just a toss. That's all.'
When old Mrs Liu heard this she shook her head, put out her tongue, and said:'My Father Buddha!How many chickens must one get to match that? No wonder it has this flavour.' As she smiled she slowly finished drinking the wine. She still did nothing else but toy with that cup carefully..
中文版: …… 刘姥姥两手捧着喝。 贾母薛姨妈都道:“慢些,不要呛了。” 薛姨妈又命凤姐儿布了菜。凤姐笑道:“姥姥要吃什么,说出名儿来,我搛了喂你。”刘姥姥道:“我知什么名儿,样样都是好的。”贾母笑道:“你把茄鲞搛些喂他。”凤姐儿听说,依言搛些茄鲞送入刘姥姥口中,因笑道:“你们天天吃茄子,也尝尝我们的茄子弄的可口不可口。”刘姥姥笑道:“别哄我了,茄子跑出这个味儿来了,我们也不用种粮食,只种茄子了。”众人笑道:“真是茄子,我们再不哄你。”刘姥姥诧异道:“真是茄子?我白吃了半日。姑奶奶再喂我些,这一口细嚼嚼。”凤姐果又搛了些放入口内。刘姥姥细嚼了半日,笑道:“虽有一点茄子香,只是还不像是茄子。告诉我是个什么法子弄的,我也弄着吃去。”凤姐儿笑道:“这也不难。你把才下来的茄子把皮 了,只要净肉,切成碎钉子,用鸡油炸了,再用鸡脯子肉并香菌、新笋、蘑菇、五香腐干、各色干果子,都切成钉子,拿鸡汤煨干,将香油一收,外加糟油一拌,盛在磁罐子里封严,要吃时拿出来,用炒的鸡瓜一拌就是。” 刘姥姥听了,摇头吐舌说道:“我的佛祖!倒得十来只鸡来配他,怪道这个味儿!”

茄鲞——茄干。鲞:原指干鱼、腊鱼,亦泛指成片或成丁的腌腊食品。 搛——―夹持,此指用筷子夹菜。 糟油―用酒糟调制的油,用来浇拌凉菜。 鸡瓜―鸡的腱子肉或胸脯肉。因其长圆如瓜形,故称。一说即鸡丁。
